中國菜(cuisine)是中國各地區、各民族各種菜餚的統稱，也指發源於中國的烹飪方式。中國菜歷史悠久, 流派(genre)衆多，主要代表菜系有“八大菜系”。每一菜系因氣候、地理、歷史、烹飪技巧和生活方式的差異而風格各異。中國菜的調料(seasoning)豐富多樣，調料的不同是形成地方特色菜的主要原因之一。中國菜強調色、香、味俱佳，味是菜餚的靈魂。中國飲食文化博大精深，作爲世界三大菜系之一的中國菜，在海內外享有盛譽。

翻譯評分標準

翻譯試題所呈現的是一個或幾個漢語段落，不含生僻的專業詞彙或習語。六級的試題內容難度略高於四級。要求考生在規定的時間內將漢語段落譯成英語。

四級和六級的翻譯均採用總體印象評分方式。翻譯滿分爲15分，分爲五個檔次：14分檔（13-15分）、11分檔（10-12分）、8分檔（7-9分）、5分檔（4-6分）和2分檔（1-3分）。四級和六級均採用相同的檔次描述。每次閱卷時，參照檔次描述分別確定當次考試四級和六級各檔次的評分樣卷。閱卷員經過培訓後參照評分樣卷對考生的翻譯答卷進行評分。
