It is the use of five flavours that makes the real Chinese cuisine so delicious and nourishing.

Sour, bitter, sweet, spicy and salty, will sometimes be found in a single recipe, but more often in the combination of dishes that make up a Chinese meal.

Chinese dietary therapy (which is a branch of Chinese medicine) explains that the five flavours keep the five different organs (the liver, heart, stomach, lungs and kidneys) in the body in balance.

For example, in Sichuan province, the dishes are based on spicy food to keep the body in tune with the climate, because a spicy dressing can create the "fire" needed to digest them.

中國菜之美味,在於運用酸、甜、苦、辣、鹹五味。

這五味有時能同時融合到一張菜譜上,不過更常見的還是以各式菜餚的形式組合成一套大餐。

作爲中醫的一個分支,中國的食療認爲這五味能夠幫你體內五個器官(肝、心、胃、肺、腎)處於平衡的狀態。

例如,在四川,爲了與當地氣候協調,當地飲食以辣味居多,這是因爲辛香調味料能產生“火”以便消化食物。
